Summertime Cheesecake Stuffed Strawberries

Easiest Cheesecake Stuffed Strawberries Recipe Ever


I don't think this recipe could get much easier.  It's seriously something you can whip up in just a few minutes, and it will really impress any guests you have coming over or your spouse.  My husband is a huge fan of cheesecake, but he doesn't really like strawberries.  The only time he ever eats them is if they've gone through the juicer and are mixed with other fruits and veggies.  He even eats his strawberry shortcake without strawberries.  Yup, you read that right.  He just eats the cake with whipped cream.  But I made these the other night to try out the recipe I originally found here, and he ate half of them- strawberry and all!  Not exactly the healthiest way to get him to eat more strawberries, but I'll take it!

Did you know that strawberries are high in Vitamin C and can actually help whiten your teeth?  You can make a homemade paste with mashed strawberries, brush it over your teeth, and rinse well and you're teeth will naturally be whiter.  I haven't tried this method on myself, but the seeds are supposed to help gently polish the tooth without hurting the enamel.  Of course, you need to be sure to brush all the sugar off!  Two more reasons to love this delicious summertime treat!

So let's get into the recipe now, since I know that's what you really came here for...

Ingredients:
  • 10 strawberries
  • 1 8 oz package of softened cream cheese
  • 1/4 cup of confectioners sugar
  • 1 teaspoon of vanilla extract
  • graham crackers
Tool Needed:
  • paring knife to hollow out the strawberries 
  • colander for rinsing your strawberries
  • mallet for crushing the graham crackers
  • piping bag (you can use a Ziploc bag with the tip cut off)
  • Ziploc bag for crushing the graham crackers

1. Rinse your strawberries well.  Pat them dry.

2. Hollow out the strawberries.  Usually, this just means cutting out the stem, as most are hollow inside already.

3. Place graham crackers into a baggie and pound them gently into a fine crumb.  You only really need about one cracker for this may strawberries, but if you're making a big batch you might as well pound out a few crackers at once.

4. Combine softened cream cheese, vanilla, and confectioners sugar and mix until creamy and well blended.  Add to a piping bag.


5. Fill the center of your strawberries.

6. Top with graham cracker crumbs.

7. Chill 30-60 minutes before serving.


Isn't that super easy?!  I think this is going to be my new summertime snack when I want a small dessert after dinner but don't want a big plate of calories.  I can prepare these in advance and just take one or two to appease my sweet tooth.  Much faster and takes up much less space and an actual cheesecake!  What's your favorite sweet addiction?
