Best Banana Bread Recipe EVER

Am I the only one who ever leaves the last two bananas in the fruit bowl for so long that they go from perfectly ripe to the compost bin?  I'm forever smacking the hands of my family as they go for one of them, swearing I'm "saving them for banana bread" and then earning forlorn and frustrated looks as I inevitably wind up tossing them.  I should have learned my lesson by now, but the thought of this delicious melt in your mouth banana bread is too tempting to sacrifice the opportunity!  Now that I've bought a new KitchenAid Stand Mixer and I'm home from work for the next few weeks, I've been baking nearly every day.  Hopefully that translates into many more mornings on the new patio with a cup of tea and a slice of this.   Either that or our vegetable garden next year is going to have some seriously kicking compost!

I've been making this banana bread recipe for the last ten years, and it continues to be one of my all time favorite things to make.  I know without a doubt it will come out perfectly every time, and I can cut it into thirds to make three small loaves of bread for a quick and cheap gift for friends and family. You can pick up a four pack of Regency Disposable Loaf Pans on Amazon for only $5.96 if you can't find them in your local grocery store. I'll definitely be stocking up and baking a ton of these this holiday season.  I've got lots of fresh fruit this summer being turned into mini jars of preserves, so a mini loaf of banana bread will make a perfect gift basket addition to have on hand for teachers.

This recipe calls for margarine, because back when I started baking and cooking, I hated using real butter.  I grew up with my mother using margarine, and our house was filled with things labeled low fat and diet.  I guess back in the 80s we didn't know what we do now about fake sugar and fat substitutes, and it's what I was used to.  I still use margarine to butter my bread and pretty much only for this recipe and have started using real butter in all my baking.  I'm sure you could substitute butter in for it, but I've never tried.  I'm also not sure whether salted or unsalted would be better, as I know those details will impact how something bakes.  If you do substitute it, please let me know how it works!  In the meantime, if you really want a recipe that uses butter instead, you should head over to this recipe on my Pinterest board.

Recipe Time!

  • 2 cups all purpose flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup white sugar
  • 1/2 cup margarine
  • 2 ripe bananas
  • 1 egg
  • 5 tbs whole milk

Step By Step:

Preheat oven to 350 degrees

1. Sift flour, baking soda, baking powder, and salt into a small bowl.  Set aside for now.
2. In a large bowl, cream your sugar and margarine.
3. In separate bowl, beat  your egg lightly and add to your creamed sugar and margarine.
4. Slowly mix in your banana.  You can smash this down in another bowl and add in, or I prefer to cut chunks off and mix them in with the stand mixer on low until it's fully incorporated.  The batter will be runny at this point.
5. Add milk and mix on low until blended.
6. Slowly, a few tablespoons at a time, add your dry ingredients.  This is where the stand mixer becomes so much easier than a hand mixer or a wisk, as you don't have to stop to add.   You can just keep mixing!

7. Pour batter into a greased loaf pan, or if using the small paper pans divided up into thirds. Bake at 350 degrees for 55-60 minutes for one pan, 40-45 minutes for three smaller pans.  Bread is done when a toothpick comes out clean.

Wait a few minutes for it to cool before slicing, but when it's nice and hot still is the best time to enjoy!  I like to take a slice, put a little butter on it, then pop it back in the oven under the broiler on low for 3-4 minutes to toast it up.  My husband taught me that trick years ago, and I can't eat banana bread not toasted anymore.  It's too delicious!
