Quick and Easy Stuffed Peppers Recipe

Ingredients:
  • 3 Large Green Bell Peppers
  • 1 Lb Ground Meat (I like a pork and beef mix)
  • 1 1/2 C. Cooked White Rice
  • 29 oz can of Tomato Sauce
  • Salt and Pepper to Taste

Cooking Time: 25 minutes

I've been making this for my husband our entire nine year marriage, and he absolutely loves it.  It was one of the first recipes I learned to make when we started living together, and it's been so long I can't remember where I found it.  At first, I would use the peppers standing up and but some sauce in the bottom and fill them with the cooked rice and raw ground beef then cover with more sauce and bake.  Over time, I've tweaked things so that they cook faster.  I've also switched to a pork and beef mix I found at my local grocery store marketed as "meatloaf mix".  The pork gives it a little extra flavor.  It makes me wonder what it would taste like with a bit of cooked bacon crumbled in?  I may have to try that next time and give you guys an update!  Or better yet, you guys can try it and post your thoughts below!

Prep Steps:

1.  Preheat oven to 350 degrees.
2.  Cook your white rice.  I use a rice cooker rather than a boil in a bag kind.  I like to make a lot of rice at once so that I have some white rice left over for my finicky five year old.  He always eats plain white rice, so a container in the fridge can be a lifesaver when he's pitching a fit.  It takes about 20 minutes, so keep that in mind when selecting your method.  Boil in a bag will be much faster.
3.  While the rice cooks, cut your peppers.  You can fill each individual pepper, but it will take a lot longer to cook, about 45 minutes.  It's less messy to serve this way though.  Again, this is the quick method for the "Quick and Easy" part of the stuffed peppers recipe.  Your kitchen, your choice.

4.  Brown your ground meat.  I usually crumble up the meat as much as I can into a pan, put it over medium high heat and then go cut the peppers while it starts to brown and the rice cooks.  Yay multitasking!

Cooking Steps:

1.  Drain your meat and mix it with the cooked rice. You may have to give them a minute or so to cool, or just use a giant spoon to mix once the steam dissipates.

2.  Add salt and pepper to taste.  Remember, the canned tomato sauce it going to have a lot of salt in it already, so I recommend just a pinch.

3.  Fill your peppers with the meat/rice mixture.

4.  Cover with canned tomato sauce.

5.  Bake at 350 degrees for 25 minutes.

That's about it!  Just serve your peppers right out of the pan.  It has three of your major food groups represented: protein, grains, and veggies, so I usually just keep the rest of the meal simple with bread and a salad.  What do you like to serve with your stuffed peppers?
